Blending and pasteurising

Processing the sauce includes blending and pasteurising it. It's quite a time consuming job and it also tends to make the kitchen smell and leave me or anyone else who's in gag a bit with all the capsaicin going into the atmosphere! There's a real sense of pride and achievement however when the final product gently fills the bottle.....
