Working with Guy

I first met Guy from Meanwood Microgreens around three years ago through us both having regular stalls on the local markets circuit. He grows and sells microgreen vegetables such as pea shoots, radish, leek and cabbage. Not only are they super delicious but really healthy and nutritious too. We had great conversations about healthy eating, fermentation, pickling and life in general. We quickly became good friends and started to discuss the possibility of working together. Initially, Guy asked me to develop a salad dressing oil to compliment the microgreens, we agreed it should be made using very good quality extra virgin olive oil and that no compromise would be acceptable. After all, the microgreens are incredible quality so it made sense the dressing should be too. After a few test batches "The Perfect Match" was born. It's 100% Spanish extra virgin olive oil gently infused with fresh rosemary, thyme, garlic and lemon. I have to say it's really, really good and customer's agree too. Each batch has sold out very quickly, sometimes in less than a day!


This has given us the confidence to work on other stuff too and I'm now producing a vegan, gluten free and nut free microgreen & basil pesto sauce for him. Not only is this a great tasting product but it helps Guy ensure he has minimal waste and utilises any microgreens he doesn't sell on market days.


The final product we have developed is the one that perhaps I'm most proud of, it's a fermented fennel and microgreen sauerkraut probiotic salad dressing. To make it sounds complicated but it really isn't. I make an everyday sauerkraut, adding fennel, microgreens and caraway seeds After a couple of weeks fermenting I blend it with extra virgin olive oil and a touch of white wine vinegar, creating the most stunning salad dressing I think I've ever tasted. It's packed with complexity and umami yet light and subtle. It has the added bonus of being a live ferment so the probiotic goodness is still in there.
